Funeral Potatoes (Cheesy Potato Casserole)

Ingredients

• 1 bag (30–32 oz) frozen diced hash browns, thawed
• 2 cups sour cream
• 1 can (10.5 oz) cream of chicken soup
• 2 cups cheddar cheese, shredded
• 1/2 cup butter, melted
• 1/2 onion, finely chopped
• 2 cups cornflake cereal, crushed
• 1/4 cup butter for topping, melted
• to taste salt and pepper

Instructions

1. 1Heat oven to 350°F. Mix potatoes, sour cream, soup, cheese, butter, onion, salt, and pepper.
2. 2Spread in a greased 9x13-inch dish.
3. 3Toss cornflakes with melted butter; sprinkle over top.
4. 4Bake 45–50 minutes until bubbling and topping is crisp.
