  • 2 large cucumbers
  • 8 oz sliced deli turkey breast
  • 4 tbsp whipped cream cheese
  • 2 tsp everything bagel seasoning
  • 1 cup fresh baby spinach

Instructions

  1. 1Wash the cucumbers and trim off both ends. Using a vegetable peeler or mandoline, slice each cucumber lengthwise into long, thin ribbons about 1/8-inch thick; you should get 8 to 10 usable ribbons.
  2. 2Lay the cucumber ribbons flat on a clean cutting board and gently pat them dry with paper towels so the filling sticks.
  3. 3Spread a thin, even layer of whipped cream cheese down the length of each ribbon, leaving a small border at the far end.
