Ingredients

  • 8 slices thick sourdough bread slices
  • 8 oz block feta cheese
  • 1/2 cup whole-milk ricotta
  • 1 tsp lemon zest
  • 3 Tbsp extra-virgin olive oil
  • 1.5 lb heirloom tomatoes
  • 1 tsp flaky sea salt
  • 1/2 tsp freshly cracked black pepper
  • 1 cup fresh basil leaves
  • 3 Tbsp hot honey
  • 1/4 cup toasted pine nuts

Instructions

  1. 1Pat the feta dry and break it into a food processor with the ricotta, lemon zest, and a drizzle of olive oil. Blitz until completely smooth and cloud-like, scraping the bowl once, about 45 seconds.
  2. 2Taste the whipped feta and adjust with black pepper; transfer to a small bowl and chill while you prep the rest so it firms slightly.
  3. 3Slice the heirloom tomatoes into generous 1/4-inch rounds, keeping different colors separate for a pretty stack. Lay them on a sheet pan and season both sides lightly with flaky salt and cracked pepper so the juices start to bloom.
  4. 4Toast the sourdough slices in a toaster or under a broiler set to high until deep golden and crisp at the edges, about 2–3 minutes per side; watch closely so they do not burn.
  5. 5While the bread is still warm, brush each slice lightly with olive oil so the surface stays flavorful and prevents sogginess.
  6. 6Spread a thick swoosh of whipped feta over every toast, going all the way to the edges.
  7. 7Layer two or three tomato slices on each toast, overlapping slightly and alternating colors if you have them.
  8. 8Tuck torn basil leaves between and on top of the tomatoes, then drizzle hot honey in thin ribbons so every bite gets sweet heat.
  9. 9Scatter toasted pine nuts over the stacks for crunch, finish with one more crack of pepper, and serve immediately while the toast is still crisp and the tomatoes are juicy.
