Ingredients

  • 3 cups cooked brown rice
  • 2 cups fresh sweet corn kernels
  • 1 can (15 oz) canned black beans
  • 2 medium heirloom tomatoes
  • 2 avocado
  • 1/2 small red onion
  • 1 jalapeño
  • 1/2 cup fresh cilantro
  • 3 tbsp lime juice
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1 tsp kosher salt
  • 1/2 cup crumbled cotija cheese
  • 1/2 cup plain Greek yogurt

Instructions

  1. 1Heat a large cast-iron skillet over medium-high until very hot. Add half the olive oil and the fresh corn kernels in a single layer. Let them sit undisturbed for 2 to 3 minutes so they develop deep char marks, then stir and cook another 2 minutes until blistered and sweet. Season with salt and transfer to a bowl.
  2. 2Drain and rinse the black beans. In the same skillet over medium heat warm the beans with the chili powder, cumin, smoked paprika, and a splash of water for 3 to 4 minutes until fragrant and heated through.
  3. 3Dice the heirloom tomatoes and red onion; finely mince the jalapeño (remove seeds for less heat). Chop the cilantro. In a bowl toss the tomatoes, onion, jalapeño, half the cilantro, lime juice, remaining olive oil, and remaining salt to make a quick pico.
  4. 4Warm the cooked brown rice if it is cold. Divide the rice among four bowls or meal-prep containers as the base.
  5. 5Spoon the spiced black beans and charred corn over the rice in separate sections. Add a generous scoop of the heirloom tomato pico to each bowl.
  6. 6Halve, pit, and slice the avocados. Fan the slices over each bowl. Dollop Greek yogurt on top and finish with crumbled cotija and the remaining cilantro.
  7. 7Squeeze any extra lime over the bowls just before eating. The contrast of warm charred corn, cool creamy avocado, and bright tomato pico makes these bowls feel fresh yet filling for midday.
  8. 8For work lunches assemble everything except the avocado and yogurt; pack those separately and add just before eating so nothing browns or gets soggy.
