  • 1 1/2 cups dry short-grain brown rice or farro
  • 10 oz mixed fresh mushrooms (shiitake and cremini)
  • 2 tbsp neutral oil
  • 2 tbsp white miso paste
  • 2 tbsp rice vinegar
  • 1 tsp toasted sesame oil
  • 1 tsp maple syrup
  • 1 large crisp apple
  • 4 cups baby spinach
  • 3 scallions
  • 1 tbsp toasted sesame seeds
  • 4 soft-boiled eggs
  • 1 tbsp soy sauce or tamari
  • 1 tsp fresh ginger, grated
  • 1/2 tsp kosher salt

Instructions

  1. 1Rinse the grain under cold water until the water runs clearer. Cook according to package directions in lightly salted water until tender but still chewy, about 25 to 40 minutes depending on the grain. Fluff and keep warm or cool for meal-prep.
  2. 2While the grain cooks, remove shiitake stems and slice all mushrooms into even 1/4-inch pieces.
  3. 3Whisk miso, rice vinegar, sesame oil, maple syrup, grated ginger, and soy sauce in a small bowl until smooth to make a quick glaze.
  4. 4Heat neutral oil in a wide skillet over medium-high heat. Add the mushrooms and salt; cook undisturbed 2 minutes, then stir and continue until browned and any liquid has cooked off, 7 to 9 minutes.
  5. 5Reduce heat to medium-low. Pour the miso glaze over the mushrooms and toss for 60 to 90 seconds until glossy and fragrant. Remove from heat.
  6. 6Core the apple and cut into thin wedges or dice. Thinly slice the scallions on the bias.
  7. 7Divide the warm or room-temperature grain among four bowls. Nestle baby spinach on one side so the residual heat gently wilts it.
  8. 8Spoon the glazed mushrooms over the grain, add apple pieces, and top each bowl with a soft-boiled egg halved so the yolk can mingle.
