Ingredients

  • 12 oz, drained jarred roasted red peppers
  • 28 oz canned whole peeled tomatoes
  • 1 medium, diced yellow onion
  • 4, smashed garlic cloves
  • 3 Tbsp olive oil
  • 2 Tbsp tomato paste
  • 3 cups vegetable broth
  • 15 oz, rinsed canned cannellini beans
  • 1 tsp dried basil
  • 1/2 tsp smoked paprika
  • 1/4 tsp red pepper flakes
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/3 cup heavy cream or coconut cream
  • 1/4 cup, torn fresh basil leaves
  • 1/4 cup for serving grated Parmesan

Instructions

  1. 1Heat olive oil in a large Dutch oven or heavy pot over medium heat. Add the diced onion and cook 6–7 minutes, stirring occasionally, until translucent and starting to soften at the edges.
  2. 2Stir in the smashed garlic and tomato paste; cook 1–2 minutes until the paste darkens slightly and smells sweet and caramelized.
  3. 3Add the drained roasted red peppers, canned tomatoes with their juices, vegetable broth, dried basil, smoked paprika, red pepper flakes, salt, and black pepper.
  4. 4Bring the mixture to a lively simmer, then reduce heat to medium-low, cover partially, and cook 15 minutes so the flavors meld and the tomatoes break down.
  5. 5Remove from heat and carefully blend the soup with an immersion blender until completely smooth and velvety, about 1–2 minutes (or work in batches in a countertop blender, venting the lid).
  6. 6Return the pot to low heat, stir in the rinsed cannellini beans and the cream, and warm through for 3–4 minutes without boiling so the beans heat and the soup stays silky.
  7. 7Taste and adjust seasoning with more salt, a squeeze of lemon, or extra red pepper flakes if you want more heat.
  8. 8Ladle into bowls, top with torn fresh basil and a sprinkle of Parmesan, and serve with crusty bread or a simple side salad for a complete midday meal.
  9. 9For meal prep, cool completely and refrigerate in airtight containers up to 4 days; reheat gently on the stove or microwave, stirring in a splash of broth if it thickens.
