Ingredients
- 1 lb boneless skinless chicken thighs
- 3 medium ripe red or black plums
- 12 large butter lettuce or little gem leaves
- 1/3 cup packed fresh mint leaves
- 1/3 cup packed fresh cilantro leaves
- 2 lime
- 1 tbsp honey
- 1 tbsp rice vinegar
- 1 tbsp fish sauce or soy sauce
- 2 cloves garlic
- 1 tbsp grated fresh ginger
- 1 tbsp neutral oil
- 1 tbsp toasted sesame seeds
- 3/4 tsp kosher salt
- 1/4 tsp red pepper flakes
Instructions
- 1Pat chicken thighs dry and cut into 1/2-inch pieces; toss with salt, half the grated ginger, and 1 minced garlic clove.
- 2Heat a large 12-inch skillet over medium-high heat; add oil and cook chicken in a single layer for 5–6 minutes, stirring once, until golden and cooked through (165°F internal); transfer to a bowl.
- 3While chicken cooks, halve plums, remove pits, and dice into 1/2-inch pieces; place in a medium bowl.
- 4Zest one lime and juice both limes (juice); whisk juice and zest with honey, rice vinegar, fish sauce, remaining ginger and garlic, and red pepper flakes.
- 5Pour half the dressing over the warm chicken and toss; pour the rest over the diced plums and gently macerate 5 minutes so juices release and sweeten.
- 6Wash and dry lettuce leaves thoroughly; arrange on a platter or pack in containers with paper towels if meal-prepping.
- 7Combine chicken and macerated plums (with their juices) in one bowl; fold in torn mint and cilantro.
- 8Spoon filling into each lettuce cup, sprinkle with sesame seeds, and serve immediately or chill up to 4 hours for a bright work lunch.
- 9Offer extra lime wedges on the side so each person can brighten their wraps just before eating.
