
Miso Ginger Soba Noodle Bowls with Soft Eggs

Ingredients
- 8 oz dried soba noodles
- 3 tbsp white or yellow miso paste
- 1 tbsp fresh ginger, grated
- 2 tbsp soy sauce or tamari
- 1.5 tbsp rice vinegar
- 1 tbsp toasted sesame oil
- 1 tsp honey or maple syrup
- 4 large eggs
- 1 English cucumber, julienned
- 2 cups shredded red cabbage
- 1.5 cups edamame, shelled and thawed
- 4 scallions, thinly sliced
- 1 tbsp toasted sesame seeds
- 1 optional nori sheets, snipped into strips
Instructions
- 1Bring a large pot of water to a rolling boil. Add soba noodles and cook according to package directions, usually 5–6 minutes, until just al dente and still pleasantly chewy.
- 2While noodles cook, whisk miso paste, grated ginger, soy sauce, rice vinegar, sesame oil, and honey in a large mixing bowl until completely smooth and no miso lumps remain.
- 3Drain the soba into a colander and rinse thoroughly under cold running water for 30–45 seconds, tossing with your hands, until the noodles are fully cooled and no longer sticky. Shake off excess water.
- 4Add the cooled soba directly to the miso-ginger dressing and toss with tongs until every strand is glossy and coated.
- 5Bring a small saucepan of water to a gentle boil. Lower in the eggs and cook exactly 7 minutes for jammy soft-boiled yolks. Transfer immediately to an ice bath for 3 minutes, then peel carefully.
- 6Divide the dressed soba among 4 bowls or meal-prep containers. Arrange julienned cucumber, shredded red cabbage, and edamame in neat sections the noodles.
- 7Halve the soft-boiled eggs and place two halves on each bowl. Sprinkle with scallions, sesame seeds, and optional nori strips.
- 8Serve chilled or at cool room temperature. These hold well in the fridge up to 2 days; keep the eggs separate if packing ahead and add just before lunch so the yolks stay perfect.
