Ingredients

  • 8 large eggs
  • 1/2 cup soy sauce
  • 1/2 cup water
  • 2 tbsp mirin or rice vinegar
  • 1.5 tbsp brown sugar or honey
  • 3 garlic cloves, smashed
  • 4 fresh ginger slices
  • 4 green onions, sliced
  • 1 tsp toasted sesame oil
  • 3 cups cooked short-grain or jasmine rice
  • 1 cucumber, thinly sliced
  • 1 cup kimchi
  • 1 tbsp toasted sesame seeds
  • 2 tbsp nori strips or furikake optional
  • 2 cups baby spinach or mixed greens

Instructions

  1. 1Bring a medium pot of water to a rolling boil; gently lower in the eggs and boil exactly 6 minutes and 30 seconds for jammy yolks.
  2. 2Transfer eggs immediately to an ice bath and cool 5 minutes so shells peel cleanly without tearing.
  3. 3Peel the eggs carefully under cool running water and place them in a clean jar or shallow container.
  4. 4Whisk soy sauce, water, mirin, brown sugar, smashed garlic, ginger slices, half the green onions, and sesame oil until sugar dissolves.
  5. 5Pour the marinade over the peeled eggs, ensuring they are fully submerged; cover and refrigerate at least 2 hours or overnight for maximum flavor.
  6. 6When ready to serve, warm the cooked rice and divide among four bowls.
  7. 7Add baby spinach or greens to each bowl, then top with two marinated eggs sliced in half to show the jammy centers.
  8. 8Arrange cucumber slices and a scoop of kimchi beside the eggs for crunch and heat.
  9. 9Spoon a little extra marinade over the rice if desired, then finish with remaining green onions, sesame seeds, and optional nori.
  10. 10These keep well for meal-prep; store eggs in marinade up to 4 days and assemble fresh bowls for addictive Korean-inspired lunches.
