Ingredients

  • 12 oz cooked turkey breast, thinly sliced or shredded
  • 4 large pita breads or flatbreads
  • ¾ cup plain hummus
  • 1 medium English cucumber
  • 1 cup cherry tomatoes
  • 2 cups baby spinach or mixed greens
  • ¼ medium red onion
  • ½ cup feta cheese, crumbled
  • 2 Tbsp fresh lemon juice
  • 1 Tbsp extra-virgin olive oil
  • 1 tsp dried oregano
  • ½ tsp garlic powder
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • 2 Tbsp chopped fresh dill or parsley (optional)

Instructions

  1. 1In a medium bowl toss the turkey with lemon juice, olive oil, oregano, garlic powder, salt, and pepper until evenly coated; let marinate 10 minutes at room temperature while you prep vegetables.
  2. 2Halve the cucumber lengthwise, scoop out seeds with a spoon, and slice into thin half-moons. Halve the cherry tomatoes and very thinly slice the red onion.
  3. 3Warm the pitas one at a time in a dry skillet over medium heat for 30–45 seconds per side until pliable and lightly toasted; keep wrapped in a clean towel so they stay soft.
  4. 4Spread hummus evenly over each pita, leaving a ½-inch border so filling doesn’t squeeze out.
  5. 5Layer a small handful of spinach down the center of each pita, followed by marinated turkey, cucumber slices, tomatoes, red onion, and a sprinkle of feta.
  6. 6Add fresh dill or parsley if using. Fold the bottom of the pita up slightly, then roll tightly from one side like a burrito, tucking ingredients in as you go.
  7. 7If packing for later, wrap each pita snugly in parchment or foil and refrigerate up to 24 hours. For extra security, cut in half on a diagonal just before eating.
  8. 8Serve immediately with any remaining lemon wedges or a side of extra hummus for dipping.
