- 1 lb diced cooked turkey breast
- 2 medium Honeycrisp apples
- 2 celery stalks
- 1/4 cup finely diced red onion
- 1/3 cup mayonnaise
- 1/4 cup plain Greek yogurt
- 1 1/2 tbsp Dijon mustard
- 1 tbsp fresh lemon juice
- 2 tbsp chopped fresh tarragon or parsley
- 3/4 tsp kosher salt

- 4 soft potato rolls or brioche buns
- 8 butter lettuce leaves
- 4 optional sharp cheddar slices
Instructions
- 1Dice the cooked turkey into small, even cubes so every bite of the salad has good texture. Place it in a large mixing bowl.
- 2Core the Honeycrisp apples and cut them into small dice, leaving the skin on for color and crunch. Immediately toss the apple pieces with the lemon juice so they stay bright white.
- 3Thinly slice the celery and finely dice the red onion. Add both to the turkey along with the dressed apples.
- 4In a separate small bowl whisk together the mayonnaise, Greek yogurt, Dijon mustard, chopped herbs, salt, and pepper until smooth and creamy.
