Ingredients
- 2 cups old-fashioned rolled oats
- 2 cups plain nonfat Greek yogurt
- 1 1/2 cups unsweetened almond milk
- 2 scoops vanilla protein powder
- 2 medium crisp apples
- 1/4 cup natural peanut butter
- 2 tbsp chia seeds
- 2 tsp ground cinnamon
- 3 tbsp pure maple syrup
- 1 tsp vanilla extract
- 1 pinch of salt
- 1/4 cup chopped toasted walnuts
Instructions
- 1Wash and core the apples, then dice them into small bite-size pieces so they soften overnight and distribute evenly.
- 2In a large mixing bowl whisk together the Greek yogurt, almond milk, protein powder, maple syrup, vanilla, cinnamon, and salt until completely smooth with no powder lumps.
- 3Stir in the rolled oats and chia seeds until every oat is coated and the mixture looks creamy.
- 4Fold in most of the diced apple, reserving a small handful for topping in the morning.
- 5Divide the mixture evenly among four lidded jars or meal-prep containers, packing it down gently.
- 6Spoon a swirl of peanut butter on top of each jar and scatter the reserved apple pieces over the surface.
- 7Seal the jars and refrigerate at least 6 hours or overnight so the oats hydrate and the flavors meld.
- 8In the morning give each jar a quick stir; if it seems thick, loosen with a splash of almond milk.
- 9Top with the chopped walnuts just before eating for crunch.
- 10Serve cold straight from the jar for a grab-and-go school morning or warm gently in the microwave for 45–60 seconds if preferred.
