Honeycrisp Apple & Turkey Cheddar Melt Sandwiches

  • 12 oz sliced roasted turkey breast
  • 1 large Honeycrisp apple
  • 6 oz sharp cheddar cheese
  • 8 slices whole-grain sandwich bread
  • 3 tbsp Dijon mustard
  • 2 tbsp mayonnaise
  • 1 tsp fresh thyme leaves
  • 2 tbsp unsalted butter
  • 2 cups baby arugula
  • ¼ tsp kosher salt
  • ¼ tsp black pepper

Instructions

  1. 1Core the Honeycrisp apple and slice it into very thin half-moons, about ⅛-inch thick; leave the skin on for color and crunch. Thinly slice or tear the cheddar if not already sliced.
  2. 2In a small bowl stir together the Dijon mustard, mayonnaise, and fresh thyme until smooth. Season the spread lightly with salt and pepper.
  3. 3Lay out the bread slices on a clean board. Spread the mustard-mayo mixture evenly on one side of every slice.
  4. 4On four of the slices layer turkey, overlapping slightly, then arrange apple slices in a single layer, followed by cheddar. Top with a small handful of arugula and close with the remaining bread slices, spread-side down.
  5. 5Heat a large skillet or griddle over medium heat. Melt half the butter and swirl to coat the surface.
  6. 6Place two sandwiches in the pan. Cook until the underside is deep golden brown and crisp, 3 to 4 minutes. Press gently with a spatula for even browning.
  7. 7Flip carefully, adding a bit more butter if the pan looks dry. Cook the second side until equally golden and the cheese is fully melted and oozing, another 3 to 4 minutes. Transfer to a cutting board and repeat with the remaining sandwiches.
  8. 8Let the melts rest 1 minute so the cheese sets slightly, then slice diagonally. Serve immediately or wrap snugly in parchment for still-warm lunchbox delivery. The sweet-tart apple keeps the sandwich tasting bright and seasonal.
