
Greek Lemon Chicken Pita Wraps with Cucumber Yogurt Sauce

Ingredients
- 1.25 lb boneless skinless chicken thighs
- 3 tbsp extra-virgin olive oil
- 3 tbsp fresh lemon juice
- 3 garlic cloves, minced
- 1.5 tsp dried oregano
- 1 tsp smoked paprika
- 1.25 tsp kosher salt
- 1/2 tsp black pepper
- 1 cup plain Greek yogurt
- 1/2 English cucumber, grated and squeezed dry
- 2 tbsp fresh dill, chopped
- 4 pita breads
- 2 cups romaine hearts, shredded
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/2 cup crumbled feta
Instructions
- 1Pat the chicken thighs dry and place them in a bowl. Whisk olive oil, lemon juice, 2 minced garlic cloves, oregano, smoked paprika, salt, and black pepper; pour over chicken and toss to coat. Marinate at room temperature 15 minutes while you prep the sauce.
- 2In a small bowl stir together Greek yogurt, grated cucumber, remaining garlic, remaining lemon juice, dill, remaining salt, and pepper until creamy. Taste and adjust lemon or salt; refrigerate until serving.
- 3Heat a large cast-iron skillet or grill pan over medium-high heat. Add the remaining olive oil. When the oil shimmers, add the chicken in a single layer and cook undisturbed 5–6 minutes until deeply golden.
- 4Flip the chicken and cook another 5–7 minutes until the internal temperature reaches 165°F and juices run clear. Transfer to a cutting board and rest 5 minutes, then slice thinly against the grain.
- 5Warm the pitas: wrap them in a slightly damp paper towel and microwave 20–30 seconds, or toast in a dry skillet 30 seconds per side until pliable and lightly blistered.
- 6Spread a generous spoonful of cucumber yogurt sauce down the center of each warm pita. Pile on shredded romaine, then arrange sliced chicken over the greens.
- 7Top each wrap with cherry tomatoes, red onion, and crumbled feta. Drizzle any remaining sauce over the filling.
- 8Fold the bottom of the pita up, then roll tightly from one side to enclose the filling. Slice in half on a diagonal if desired and serve immediately while the chicken is still warm.
