  • 1.25 lb boneless skinless chicken thighs
  • 3 tbsp extra-virgin olive oil
  • 3 tbsp fresh lemon juice
  • 3 garlic cloves, minced
  • 1.5 tsp dried oregano
  • 1 tsp smoked paprika
  • 1.25 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 cup plain Greek yogurt
  • 1/2 English cucumber, grated and squeezed dry
  • 2 tbsp fresh dill, chopped
  • 4 pita breads
  • 2 cups romaine hearts, shredded
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup crumbled feta

Instructions

  1. 1Pat the chicken thighs dry and place them in a bowl. Whisk olive oil, lemon juice, 2 minced garlic cloves, oregano, smoked paprika, salt, and black pepper; pour over chicken and toss to coat. Marinate at room temperature 15 minutes while you prep the sauce.
  2. 2In a small bowl stir together Greek yogurt, grated cucumber, remaining garlic, remaining lemon juice, dill, remaining salt, and pepper until creamy. Taste and adjust lemon or salt; refrigerate until serving.
  3. 3Heat a large cast-iron skillet or grill pan over medium-high heat. Add the remaining olive oil. When the oil shimmers, add the chicken in a single layer and cook undisturbed 5–6 minutes until deeply golden.
  4. 4Flip the chicken and cook another 5–7 minutes until the internal temperature reaches 165°F and juices run clear. Transfer to a cutting board and rest 5 minutes, then slice thinly against the grain.
  5. 5Warm the pitas: wrap them in a slightly damp paper towel and microwave 20–30 seconds, or toast in a dry skillet 30 seconds per side until pliable and lightly blistered.
  6. 6Spread a generous spoonful of cucumber yogurt sauce down the center of each warm pita. Pile on shredded romaine, then arrange sliced chicken over the greens.
  7. 7Top each wrap with cherry tomatoes, red onion, and crumbled feta. Drizzle any remaining sauce over the filling.
  8. 8Fold the bottom of the pita up, then roll tightly from one side to enclose the filling. Slice in half on a diagonal if desired and serve immediately while the chicken is still warm.
