- 3 cups cooked shredded chicken breast
- 1 1/2 cups seedless green grapes
- 1 medium crisp apple
- 2 celery stalks
- 3 tbsp chopped fresh dill
- 3 tbsp chopped fresh parsley
- 1/2 cup plain Greek yogurt
- 2 tbsp mayonnaise
- 1 tsp Dijon mustard
- 1 tbsp fresh lemon juice
- 3/4 tsp kosher salt
- 1/2 tsp freshly ground black pepper
- 4 large flour tortillas or wraps
- 8 butter lettuce leaves
Instructions
- 1Halve the grapes so they release a little juice and distribute evenly through the salad without rolling out of the wrap.
- 2Core the apple and dice it into small 1/4-inch cubes; leave the skin on for color and extra crunch.
- 3Thinly slice the celery on a bias so you get crisp, aromatic pieces that stay light in the mix.
- 4In a large bowl, combine the shredded chicken, halved grapes, diced apple, and sliced celery.
- 5Add the chopped dill and parsley and toss lightly so the herbs coat the chicken and fruit.
- 6In a separate small bowl, stir together the Greek yogurt, mayonnaise, Dijon, lemon juice, salt, and pepper until the dressing is creamy and smooth.
- 7Pour the dressing over the chicken mixture and fold gently with a spatula until everything is evenly coated without mashing the grapes.
- 8Taste and adjust seasoning if needed; the salad should taste bright, herby, and lightly tangy.
