Ingredients
- 24 pieces frozen pork or chicken gyoza
- 3 tbsp gochujang paste
- 3 tbsp low-sodium soy sauce
- 2 tbsp rice vinegar
- 1 tbsp toasted sesame oil
- 1 tbsp honey
- 3 garlic cloves, minced
- 2 tsp fresh ginger, grated
- ½ cup water or broth
- 4 heads baby bok choy, halved lengthwise
- 8 oz shiitake mushrooms, sliced
- 4 scallions, sliced
- 1 tbsp toasted sesame seeds
- 1 tbsp neutral oil
- ¼ tsp kosher salt
Instructions
- 1Preheat the oven to 400°F and lightly oil a 9×13-inch baking dish or large oven-safe skillet.
- 2Whisk gochujang, soy sauce, rice vinegar, sesame oil, honey, minced garlic, grated ginger, and water until you have a glossy, spicy-sweet sauce.
- 3Scatter the sliced shiitake mushrooms across the bottom of the dish and nestle the frozen dumplings on top in a single snug layer.
- 4Pour the gochujang sauce evenly over everything so the dumplings sit in a shallow pool of liquid.
- 5Cover tightly with foil and bake 18 minutes until the dumplings are heated through and the mushrooms have released their juices.
- 6Meanwhile toss the halved baby bok choy with a drizzle of neutral oil and salt.
- 7Uncover the dish, tuck the bok choy halves the dumplings cut-side up, and return to the oven uncovered for 10 to 12 minutes until the greens wilt and char lightly and the sauce reduces to a sticky glaze.
- 8Check that dumpling wrappers look tender and slightly blistered at the edges; if the sauce looks thin, broil 1 to 2 minutes watching closely.
- 9Finish with sliced scallions and a shower of toasted sesame seeds for crunch and aroma.
