Ingredients

  • 15 oz, rinsed and dried canned chickpeas
  • 2 Tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp ground cumin
  • 3/4 tsp kosher salt
  • 4 large flour tortillas
  • 3/4 cup hummus
  • 1, diced English cucumber
  • 1 cup, halved cherry tomatoes
  • 2 cups baby spinach
  • 1/2 cup crumbled feta cheese
  • 1/3 cup, pitted and halved Kalamata olives
  • 1/4 cup, thinly sliced red onion
  • 1 Tbsp fresh lemon juice
  • to taste (optional) hot sauce or chili crisp

Instructions

  1. 1Pat the rinsed chickpeas very dry with a clean kitchen towel; moisture is the enemy of crispiness. Toss them in a bowl with olive oil, smoked paprika, garlic powder, cumin, and salt until evenly coated.
  2. 2Spread chickpeas in a single layer in an air-fryer basket (or on a sheet pan). Air-fry at 400°F for 12–15 minutes, shaking halfway, until deep golden and crunchy; oven method is 425°F for 20–25 minutes.
  3. 3While chickpeas cook, dice the cucumber, halve the tomatoes, crumble the feta, and slice the onion and olives so assembly is fast.
  4. 4Warm each tortilla in a dry skillet over medium heat for 15–20 seconds per side until soft and lightly toasted in spots; keep stacked under a towel.
  5. 5Spread hummus in a wide strip down the center of each tortilla, leaving a 1-inch border at the edges for folding.
  6. 6Layer baby spinach, a generous handful of the hot crispy chickpeas, cucumber, tomatoes, feta, olives, and red onion over the hummus.
  7. 7Drizzle with the remaining olive oil, a squeeze of lemon juice, and a few dashes of hot sauce or chili crisp if you like heat.
  8. 8Fold the bottom edge up over the filling, fold in the sides, and roll tightly away from you into a snug wrap. Slice in half and serve right away while the chickpeas are still shatteringly crisp.
