  • 3 medium zucchini
  • 1.5 cups fresh corn kernels
  • 1.5 cups halved cherry tomatoes
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/3 cup grated Parmesan
  • 4 sliced green onions
  • 2 cloves minced garlic
  • 2 Tbsp chopped fresh dill

  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes

Instructions

  1. 1Grate the zucchini on the large holes of a box grater. Place the shreds in a clean kitchen towel, gather the ends, and squeeze firmly over the sink until almost no liquid remains; this step is essential for crisp fritters.
  2. 2Transfer the dry zucchini to a large bowl. Stir in the eggs, flour, Parmesan, half the green onions, minced garlic, dill, salt, and black pepper until a thick, cohesive batter forms.
  3. 3Preheat the air fryer to 375°F for 3 minutes. Lightly mist the basket with olive oil spray. Scoop heaping tablespoons of batter and gently flatten into ½-inch-thick fritters; you should get about 12.
  4. 4Arrange fritters in a single layer without crowding (work in batches). Spray the tops lightly with oil and air-fry for 8 minutes. Flip carefully, spray again, and cook another 5 to 6 minutes until deep golden and crisp at the edges.
  5. 5While the fritters cook, make the relish: combine the corn kernels, halved cherry tomatoes, remaining green onions, a squeeze of lemon juice, salt, and red pepper flakes in a bowl. Let the mixture sit so the tomatoes release their juices.

  7. 7Keep finished fritters warm on a wire rack in a 200°F oven while you finish the remaining batches so they stay crunchy.
