Ingredients

  • 2 medium zucchini
  • 1 cup fresh corn kernels
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/2 cup panko breadcrumbs
  • 3/4 cup shredded cheddar
  • 3, sliced green onions
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

  • 3/4 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 pint cherry tomatoes
  • 4 cups baby spinach

Instructions

  1. 1Grate the zucchini on the large holes of a box grater. Pile it into a clean kitchen towel and squeeze firmly over the sink until almost no liquid remains; this step keeps the fritters crisp.
  2. 2In a large bowl combine the squeezed zucchini, corn kernels, eggs, flour, panko, cheddar, sliced green onions, garlic powder, smoked paprika, salt, and pepper. Mix until a cohesive, scoopable batter forms.
  3. 3Preheat the air fryer to 375°F for 3 minutes. Lightly spray the basket. Scoop 1/4-cup portions of batter, flatten gently into 1/2-inch-thick patties, and arrange in a single layer without crowding.
  4. 4Air-fry 8 minutes, then carefully flip each fritter, spray the tops lightly, and cook another 6 to 8 minutes until deep golden, crisp on the edges, and set in the center. Work in batches if needed.
  5. 5While fritters cook, stir Greek yogurt with lemon juice and salt for a quick cool dip. Halve the cherry tomatoes and portion baby spinach into four lunch containers.
  6. 6Let fritters cool 5 minutes on a wire rack so steam escapes and bottoms stay crunchy. Pack three fritters per container alongside spinach, tomatoes, and a small cup of the yogurt dip.
  7. 7These reheat beautifully: 3 minutes at 350°F in the air fryer or a quick microwave burst followed by a toaster-oven crisp. They also taste great cold or room-temp for desk lunches.
  8. 8Store assembled boxes in the fridge up to 4 days. Keep the dip sealed separately until ready to eat so the fritters stay crisp.
