Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water or broth
  • 2 1/2 cups fresh sweet corn kernels
  • 1 tbsp neutral oil
  • 4 large eggs
  • 3 tbsp chili crisp
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1/3 cup scallions, thinly sliced
  • 1/4 cup fresh cilantro leaves
  • 1 large avocado, sliced
  • 4 lime wedges
  • 3/4 tsp kosher salt

Instructions

  1. 1Rinse the quinoa under cold water until the water runs clear, then combine it with water or broth and salt in a small saucepan. Bring to a boil, cover, reduce heat to low, and simmer for 15 minutes until the grains are fluffy and the liquid is absorbed.
  2. 2While the quinoa cooks, heat a large cast-iron skillet over medium-high heat until very hot. Add the neutral oil and the sweet corn kernels in a single layer; let them sit undisturbed for 2 to 3 minutes so they develop deep char marks and a toasty aroma.
  3. 3Stir the corn once, season lightly with salt, and continue cooking another 2 minutes until many kernels are blistered and golden. Transfer the charred corn to a plate and keep the skillet handy.
  4. 4Bring a separate saucepan of water to a gentle boil. Carefully lower in the eggs and cook for exactly 7 minutes for jammy yolks. Transfer immediately to an ice bath for 2 minutes, then peel under cool running water.
  5. 5Fluff the cooked quinoa with a fork and divide it among four bowls. Top each portion with a generous scoop of the skillet-charred corn.
  6. 6Halve the soft-boiled eggs and nestle two halves into each bowl. Spoon chili crisp over the eggs and corn so the oil pools slightly into the quinoa.
  7. 7Drizzle soy sauce and rice vinegar lightly over everything, then scatter sliced scallions and cilantro leaves. Arrange avocado slices on the side and finish with a squeeze of lime.
  8. 8Serve the bowls warm or at room temperature. The chili crisp stays crunchy against the creamy egg yolk and sweet corn for a satisfying midday plate that needs almost no oven time.
