Ingredients
- 3 cups cooked short-grain rice
- 2 tbsp rice vinegar
- 1 tsp sugar
- 1/2 tsp salt
- 14 oz firm tofu
- 2 tbsp soy sauce
- 1 tbsp mirin
- 1 tsp maple syrup
- 1 tbsp sesame oil
- 4 cups baby spinach
- 8 oz shiitake mushrooms
- 1 large carrot
- 1 medium cucumber
- 1 cup edamame, shelled
- 1 tbsp black sesame seeds
- 1/4 cup pickled ginger
- 2 nori sheets
- 1 tbsp neutral oil
Instructions
- 1Press the tofu between clean kitchen towels under a heavy plate for 15 minutes to release excess water, then cut into neat bite-sized cubes. Whisk soy sauce, mirin, maple syrup, and sesame oil together in a shallow dish and gently toss the tofu cubes to coat; let them marinate while you prep the vegetables.
- 2Warm a large nonstick skillet over medium heat with a thin film of neutral oil. Arrange the marinated tofu in a single layer and cook undisturbed until the undersides turn deep golden, about 4 minutes, then turn carefully and brown the remaining sides another 3 to 4 minutes until lightly crisp all over. Transfer to a plate to cool completely so the cubes stay firm in the bento.
- 3Trim and slice the shiitake caps into soft ribbons. In the same skillet, sauté the mushrooms over medium heat until they release their juices and edges turn glossy and lightly browned, about 5 minutes; season lightly with a splash of the leftover marinade and set aside to cool.
- 4Blanch the baby spinach in boiling water for 30 seconds until just wilted and vivid green, then plunge into ice water. Squeeze out every drop of moisture and roughly chop; toss with a tiny drizzle of sesame oil and salt so the greens stay silky and seasoned.
- 5Peel the carrot into long, pastel ribbons with a vegetable peeler. Thinly slice the cucumber into half-moons. Steam or microwave the edamame until bright and tender, about 3 minutes, then cool under cold water so everything stays crisp and garden-fresh.
- 6Warm the cooked rice gently if needed. Stir rice vinegar, sugar, and salt together until dissolved, then fold the seasoning through the rice with a cutting motion so grains stay separate and lightly glossy, like morning dew on meadow grass.
- 7Assemble four bento boxes while components are cool: nestle a scoop of seasoned rice on one side and sprinkle with black sesame seeds. Arrange golden tofu cubes, sautéed shiitakes, spinach, carrot ribbons, cucumber, and edamame in neat pastel compartments beside the rice.
- 8Tuck a few slices of pickled ginger into a corner and snip nori into tiny forest-leaf shapes to garnish the rice. Close the lids firmly. Chill until ready to pack for a picnic with forest friends; serve cool or at cool room temperature so every color stays soft and inviting.
