Ingredients
- 1¼ lb sirloin or flank steak, thinly sliced against the grain
- 3 Tbsp suya spice blend (or peanut-chili-ginger mix)
- 2 Tbsp neutral oil
- 1 fresh lime
- 8 wooden or metal skewers
Instructions
- 1If using wooden skewers, soak them in water for 20 minutes so they do not scorch.
- 2Pat the steak dry and slice it thinly against the grain into strips about ¼-inch thick and 4–5 inches long.
- 3In a bowl, toss the beef strips with the suya spice blend and oil until every surface is evenly coated and slightly sticky.
- 4Thread the seasoned strips onto the skewers in a loose accordion fold, leaving small gaps for even heat.
- 5Heat a large grill pan or cast-iron skillet over medium-high until very hot, about 3–4 minutes; a drop of water should sizzle instantly.
- 6Cook the skewers in batches without crowding, turning every 1–2 minutes, until the edges char and the meat reaches medium, roughly 5–7 minutes total.
- 7Transfer finished skewers to a plate and squeeze fresh lime juice over them while still hot so the citrus brightens the smoky peanut heat.
- 8Rest 2 minutes, then serve two skewers per person over simple greens or with cucumber slices for a light, protein-forward lunch.
- 9Any leftovers reheat quickly in a hot skillet the next day and stay flavorful for meal-prep boxes.
