Ingredients

  • 1.5 lb sirloin or flank steak
  • 3 cups broccoli florets
  • 1 lb baby potatoes, halved
  • 1 red onion, cut into wedges
  • 3 tbsp olive oil
  • 1.5 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 2 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 2 tbsp fresh parsley, chopped
  • 4 lemon wedges

Instructions

  1. 1Preheat the oven to 425°F and line a large rimmed sheet pan with parchment or lightly oil it for easier cleanup.
  2. 2Toss the halved baby potatoes and red onion wedges with half the olive oil, half the salt, half the pepper, and half the garlic powder; spread them on the sheet pan.
  3. 3Roast the potatoes and onions for 15 minutes until they start to soften and take on light color at the edges.
  4. 4Meanwhile, pat the steak dry and rub it with the remaining olive oil, soy sauce, Worcestershire, smoked paprika, oregano, and the rest of the salt, pepper, and garlic powder.
  5. 5Pull the pan from the oven, push the potatoes and onions to the sides, and add the broccoli florets in the open spaces; drizzle the broccoli lightly with any remaining oil on the board.
  6. 6Nestle the seasoned steak in the center of the pan on top of or beside the vegetables.
  7. 7Return the sheet pan to the oven and roast 12 to 16 minutes, depending on thickness, until the steak reaches 130–135°F for medium-rare or your preferred doneness and the broccoli is charred at the tips.
  8. 8Transfer the steak to a cutting board, tent loosely with foil, and rest 5 to 7 minutes so the juices redistribute.
  9. 9Toss the roasted vegetables on the hot pan with chopped parsley while the steak rests.
  10. 10Slice the steak thinly against the grain, arrange over or beside the veggies, and finish with a squeeze of lemon before serving.
