Ingredients

  • 4 (about 1 inch thick) bone-in pork chops
  • 3 medium fresh peaches
  • 1/3 cup peach preserves
  • 1 tablespoon Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon soy sauce
  • 3 garlic cloves
  • 4 fresh thyme sprigs
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon butter

Instructions

  1. 1Pat the pork chops dry with paper towels and season both sides generously with salt and black pepper. Let them sit at room temperature for about 10 minutes while you prep the peaches and glaze so they cook more evenly.
  2. 2Pit and thinly slice two of the peaches; dice the third peach into small chunks and set the chunks aside for finishing. Mince the garlic cloves finely.
  3. 3In a small bowl, whisk together the peach preserves, Dijon mustard, apple cider vinegar, soy sauce, minced garlic, and red pepper flakes until smooth and glossy. Taste and adjust seasoning if needed—it should be sweet-tangy with a gentle kick.
  4. 4Heat a large 12-inch skillet over medium-high heat and add the olive oil. When the oil shimmers, carefully lay in the pork chops without crowding; sear undisturbed for 3 to 4 minutes until a deep golden crust forms.
  5. 5Flip the chops and sear the second side for another 3 minutes. Reduce heat to medium, nestle the thyme sprigs and sliced peaches the meat, and pour the glaze mixture over everything.
  6. 6Spoon the bubbling glaze over the chops continuously for 4 to 6 minutes, or until an instant-read thermometer inserted into the thickest part reads 145°F and the peaches have softened and caramelized at the edges.
  7. 7Transfer the chops to a warm plate and tent loosely with foil. Stir the butter and reserved diced peach into the skillet glaze and simmer 1 minute more until the sauce is glossy and slightly thickened.
  8. 8Return the chops to the pan or plate them and spoon the warm peach glaze and fruit generously over the top. Rest 3 minutes so juices redistribute, then serve immediately with extra pan sauce.
