  • 2 cups low-fat cottage cheese
  • 2 cups cooked brown rice
  • 3 tbsp hot honey
  • 2 tbsp soy sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 4 green onions
  • 1 cucumber
  • 1 cup cherry tomatoes
  • 1 tbsp olive oil
  • 1/2 tsp red pepper flakes

Instructions

  1. 1Heat a large nonstick skillet over medium-high heat and add the olive oil until it shimmers.
  2. 2Add the ground beef, breaking it into small crumbles with a wooden spoon; season with salt, black pepper, garlic powder, onion powder, and smoked paprika.
  3. 3Cook the beef 7 to 9 minutes, stirring occasionally, until fully browned and no pink remains; drain excess fat if needed.
  4. 4Stir in the soy sauce and half the hot honey; let the mixture simmer 1 to 2 minutes so the sauce glazes the beef and turns sticky.
  5. 5While the beef finishes, dice the cucumber and halve the cherry tomatoes; thinly slice the green onions.
  6. 6Warm the cooked brown rice if needed and divide it among four bowls as the base.
