Ingredients

  • 2 lb bone-in skin-on chicken thighs
  • 2 medium delicata squash
  • 2 cups red seedless grapes
  • 1 cup late-season cherry tomatoes
  • 2 tbsp chopped fresh rosemary
  • 2 tbsp leaves fresh thyme
  • 4 garlic cloves
  • 3 tbsp extra-virgin olive oil
  • 1.5 tsp kosher salt
  • 1 tsp black pepper
  • 1 lemon
  • 1/4 cup chopped fresh parsley

Instructions

  1. 1Preheat the oven to 425°F and position a rack in the center. Line a large rimmed sheet pan with parchment for easy cleanup and even roasting.
  2. 2Pat the chicken thighs completely dry with paper towels so the skin crisps. Season both sides generously with salt and pepper, then rub with half the chopped rosemary and thyme.
  3. 3Halve the delicata squash lengthwise, scoop out the seeds, and cut into 1-inch half-moons. Leave the edible skin on for texture and color.
  4. 4Toss the squash pieces on the sheet pan with olive oil, smashed garlic cloves, remaining herbs, salt, and pepper until every surface glistens. Spread into a single layer.
  5. 5Nestle the seasoned chicken thighs skin-side up among the squash, leaving space so steam can escape. Roast for 20 minutes until the chicken skin starts to turn golden.
  6. 6Pull the pan out carefully. Scatter the grapes and cherry tomatoes the chicken and squash. Squeeze the lemon over everything and return to the oven.
  7. 7Continue roasting 18 to 22 minutes more until the chicken reaches 165°F at the thickest part, the squash is tender and caramelized at the edges, and the grapes are blistered and jammy.
  8. 8Remove the pan and let rest 5 minutes so juices settle. Sprinkle with fresh parsley, then transfer everything to a large shareable platter.
  9. 9Serve family-style straight from the platter so guests can grab chicken, roasted squash, and sweet-tart grapes together. The pan juices make a bright natural sauce.
