  • 2 medium delicata squash
  • 2 cups red seedless grapes
  • 1 large red onion
  • 3 tbsp extra-virgin olive oil

  • 4 garlic cloves
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tbsp balsamic vinegar
  • 2 tbsp chopped fresh parsley

Instructions

  1. 1Preheat the oven to 425°F and line a large rimmed sheet pan with parchment for easy cleanup. Halve the delicata squash lengthwise, scoop out the seeds, and cut into 1/2-inch half-moons, leaving the edible skin on.
  2. 2Slice the red onion into thick wedges and smash the garlic cloves lightly with the side of a knife so they stay whole but release aroma. Toss the squash, onion, and garlic on the sheet pan with most of the olive oil, rosemary, thyme, salt, and pepper until evenly coated.
  3. 3Nestle the whole sausage links among the vegetables, spacing everything so pieces have room to brown rather than steam. Roast for 15 minutes until the squash edges start to soften and the sausages begin to firm.
  4. 4Pull the pan, scatter the grapes over and the sausages and squash, then drizzle the remaining oil. Return to the oven and roast another 12 to 15 minutes until the sausages reach 160°F internally, the squash is tender and caramelized at the edges, and the grapes are blistered and jammy.
