- 3 tbsp extra wildflower honey for glazing
- 1/2 tsp dried culinary lavender buds
- 8 petals fresh edible pansies or violets
Instructions
- 1Preheat the oven to 350°F and lightly butter four 4-inch ramekins or a muffin tin so the little cakes release cleanly after baking.
- 2In a medium bowl, whisk the flour, baking powder, sea salt, and cinnamon until the dry ingredients look evenly speckled and light.
- 3In another bowl, whisk the melted butter, honey, milk, egg, vanilla, and lemon zest until the mixture turns smooth and golden with a gentle floral scent.
- 4Pour the wet ingredients into the dry and fold with a spatula just until no flour streaks remain; the batter should be thick yet pourable and softly fragrant.
- 5Divide the batter evenly among the prepared ramekins, filling each two-thirds full so the cakes can rise into gentle domes.
