Ingredients

  • 2 cups full-fat cottage cheese
  • 3 tbsp honey
  • 1 tsp vanilla extract
  • 3 medium ripe peaches
  • 1 tbsp fresh lemon juice
  • 1 cup granola
  • 1/4 cup toasted sliced almonds
  • 1/4 tsp ground cinnamon
  • 1 pinch flaky salt

Instructions

  1. 1Add cottage cheese, honey, vanilla, and cinnamon to a food processor or high-speed blender.
  2. 2Blend until completely smooth and mousse-like, scraping down the sides once or twice, about 45 to 60 seconds.
  3. 3Taste and adjust sweetness if needed; the mixture should be lightly sweet and thick enough to layer.
  4. 4Pit and dice the peaches, then toss them with lemon juice so they stay bright and do not brown.
  5. 5Spoon a layer of the whipped cottage cheese into the bottom of four glasses or jars.
  6. 6Add a layer of diced peaches, then a sprinkle of granola and almonds.
  7. 7Repeat the layers once more, finishing with a final dollop of whipped cottage cheese and a few peach pieces on top.
  8. 8Dust lightly with extra cinnamon and a tiny pinch of flaky salt for contrast.
  9. 9Serve immediately for maximum crunch, or chill up to 2 hours if you prefer the granola slightly softened.
