Ingredients
- 3 medium crisp apples
- 2 cups seedless red grapes
- 2 tbsp fresh lemon juice
- 3 tbsp honey
- 1 tsp ground cinnamon
- 1 cup old-fashioned rolled oats
- 1/2 cup chopped toasted pecans
- 1/4 cup almond butter
- 2 tbsp maple syrup
- 1/8 tsp pinch of salt
- 1 tsp vanilla extract
- 1 cup whipped cream or vanilla yogurt for serving
Instructions
- 1Wash and core the apples, then dice them into bite-size pieces and place in a large mixing bowl.
- 2Halve the grapes and add them to the apples along with the lemon juice, honey, and cinnamon; toss gently until every piece is lightly coated and glossy.
- 3Transfer the fruit mixture to a shallow 8-inch serving dish or pie plate and press it into an even layer.
- 4In a separate bowl combine the oats, pecans, almond butter, maple syrup, salt, and vanilla.
- 5Work the mixture with a fork or clean fingers until it forms damp, clumpy clusters that hold together when pressed.
- 6Scatter the oat clusters evenly over the fruit, covering most of the surface but leaving a few fruit pockets visible for color.
- 7Cover the dish and chill in the refrigerator for at least 45 minutes so the topping firms and the fruit juices mingle.
- 8Just before serving, fluff the topping lightly with a fork if it has settled.
- 9Scoop into bowls and finish each portion with a dollop of whipped cream or a spoonful of vanilla yogurt.
- 10Serve immediately while the fruit is still cool and the clusters stay crunchy.
