  • 1 cup natural peanut butter
  • 1/3 cup honey
  • 1/2 cup vanilla protein powder
  • 3 tbsp unsweetened cocoa powder
  • 1/4 tsp pinch of sea salt
  • 2 tbsp chopped roasted peanuts for topping

Instructions

  1. 1Line a small loaf pan or 8-inch square dish with parchment paper, leaving overhang on two sides for easy lifting.
  2. 2In a medium bowl combine the peanut butter and honey; microwave 20 seconds if needed so the mixture is pourable and glossy.
  3. 3Stir in the protein powder, cocoa powder, and sea salt until a thick, uniform dough forms with no dry pockets.
  4. 4Press the mixture firmly and evenly into the prepared pan, smoothing the top with the back of a spoon.
  5. 5Sprinkle the chopped roasted peanuts over the surface and press them lightly so they adhere.
  6. 6Chill the pan in the refrigerator for at least 45 minutes until the fudge is firm enough to cut cleanly.
  7. 7Lift the slab out using the parchment overhang and place on a cutting board.
  8. 8Slice into twelve even squares or rectangles with a sharp knife wiped clean between cuts.
  9. 9Store the bites in an airtight container in the fridge for up to one week for quick high-protein dessert grabs.
