  • 1/2 cup chia seeds
  • 2 cups unsweetened almond milk
  • 2 scoops (about 60 g) vanilla whey or plant protein powder
  • 2 tablespoons monk-fruit sweetener or stevia
  • 1 cup diced fresh mango or berries for topping
  • 1/4 teaspoon pinch of cinnamon

Instructions

  1. 1In a large bowl or measuring jug, whisk the almond milk, protein powder, sweetener, and cinnamon until the powder fully dissolves and no clumps remain.
  2. 2Add the chia seeds and whisk thoroughly for a full minute so every seed is coated and suspended.
  3. 3Let the mixture sit for 5 minutes, then whisk again vigorously to break up any early clumps that form on the bottom.
  4. 4Divide the mixture evenly among four small jars or glasses, leaving a little headspace at the top.
  5. 5Seal the jars and refrigerate for at least 4 hours or overnight until the pudding is thick, spoonable, and fully set.
  6. 6When ready to eat, give each jar a quick stir if needed and top with the diced fresh mango or berries.
  7. 7Serve chilled straight from the fridge as a light high-protein dessert or evening snack.
