Ingredients
- 1/2 cup chia seeds
- 2 cups unsweetened almond milk
- 2 scoops (about 60 g) vanilla whey or plant protein powder
- 2 tablespoons monk-fruit sweetener or stevia
- 1 cup diced fresh mango or berries for topping
- 1/4 teaspoon pinch of cinnamon
Instructions
- 1In a large bowl or measuring jug, whisk the almond milk, protein powder, sweetener, and cinnamon until the powder fully dissolves and no clumps remain.
- 2Add the chia seeds and whisk thoroughly for a full minute so every seed is coated and suspended.
- 3Let the mixture sit for 5 minutes, then whisk again vigorously to break up any early clumps that form on the bottom.
- 4Divide the mixture evenly among four small jars or glasses, leaving a little headspace at the top.
- 5Seal the jars and refrigerate for at least 4 hours or overnight until the pudding is thick, spoonable, and fully set.
- 6When ready to eat, give each jar a quick stir if needed and top with the diced fresh mango or berries.
- 7Serve chilled straight from the fridge as a light high-protein dessert or evening snack.
- 8The sealed jars keep well for up to 4 days, making them ideal for grab-and-go weight-loss meal prep.
