Ingredients

  • 1 1/2 cups nonfat Greek yogurt
  • 1 scoop (30 g) vanilla protein powder
  • 1 cup mixed berries (strawberries, raspberries, blueberries)
  • 1/4 cup sugar-free dark chocolate chips
  • 2 tbsp chopped pistachios
  • 1 tbsp honey

Instructions

  1. 1Line a small rimmed baking sheet or quarter-sheet pan with parchment paper, leaving overhang on two sides for easy lifting.
  2. 2In a medium bowl whisk the Greek yogurt, vanilla protein powder, and honey together until completely smooth and no dry protein clumps remain.
  3. 3Spread the yogurt mixture evenly onto the prepared parchment into a thin rectangle about 1/4-inch thick using an offset spatula.
  4. 4Scatter the mixed berries evenly across the surface, gently pressing larger pieces so they adhere.
  5. 5Sprinkle the sugar-free dark chocolate chips and chopped pistachios over the top so every bite will have crunch and chocolate.
  6. 6Place the sheet flat in the freezer and freeze until the bark is solid, at least 2 hours or overnight.
  7. 7Once fully frozen, lift the parchment out and place the bark on a cutting board.
  8. 8Using a sharp knife, cut or snap the bark into roughly 12 even squares or shards.
  9. 9Store pieces in a freezer-safe container layered with parchment; they stay firm and ready to grab for up to 2 weeks.
  10. 10Serve straight from the freezer so the bark stays crisp and does not melt.
