Ingredients

  • 1 cup full-fat cottage cheese
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup almond flour
  • 1/2 cup oat flour
  • 1/3 cup coconut sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup dark chocolate chips
  • 2 tbsp mini chocolate chips for topping

Instructions

  1. 1Preheat the oven to 350°F and line a large baking sheet with parchment paper.
  2. 2Add the cottage cheese, egg, and vanilla to a blender or food processor and blend until completely smooth and creamy with no visible curds remaining.
  3. 3In a medium mixing bowl whisk together the almond flour, oat flour, coconut sugar, baking powder, and salt until evenly combined.
  4. 4Pour the blended cottage cheese mixture into the dry ingredients and stir with a spatula until a soft, slightly sticky dough forms.
  5. 5Fold in the dark chocolate chips until they are distributed throughout the dough.
  6. 6Scoop heaping tablespoons of dough onto the prepared sheet, spacing them about 2 inches apart; you should get 8 cookies. Gently flatten each mound with damp fingers into a thick disc.
  7. 7Press a few mini chocolate chips onto the tops of the cookies for a bakery-style finish.
  8. 8Bake for 12–14 minutes until the edges are lightly golden and the centers look just set but still soft.
  9. 9Cool the cookies on the sheet for 5 minutes so they firm up, then transfer to a wire rack to finish cooling. Enjoy warm or store airtight once fully cool.
