Ingredients
- 1 cup full-fat cottage cheese
- 1 large egg
- 1 tsp vanilla extract
- 1 cup almond flour
- 1/2 cup oat flour
- 1/3 cup coconut sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup dark chocolate chips
- 2 tbsp mini chocolate chips for topping
Instructions
- 1Preheat the oven to 350°F and line a large baking sheet with parchment paper.
- 2Add the cottage cheese, egg, and vanilla to a blender or food processor and blend until completely smooth and creamy with no visible curds remaining.
- 3In a medium mixing bowl whisk together the almond flour, oat flour, coconut sugar, baking powder, and salt until evenly combined.
- 4Pour the blended cottage cheese mixture into the dry ingredients and stir with a spatula until a soft, slightly sticky dough forms.
- 5Fold in the dark chocolate chips until they are distributed throughout the dough.
- 6Scoop heaping tablespoons of dough onto the prepared sheet, spacing them about 2 inches apart; you should get 8 cookies. Gently flatten each mound with damp fingers into a thick disc.
- 7Press a few mini chocolate chips onto the tops of the cookies for a bakery-style finish.
- 8Bake for 12–14 minutes until the edges are lightly golden and the centers look just set but still soft.
- 9Cool the cookies on the sheet for 5 minutes so they firm up, then transfer to a wire rack to finish cooling. Enjoy warm or store airtight once fully cool.
