  • 3 medium Honeycrisp or Gala apples
  • 3 tbsp unsalted butter
  • 1/4 cup light brown sugar
  • 3/4 tsp ground cinnamon
  • 1/4 tsp ground cardamom
  • 1 pinch of kosher salt
  • 1 pint vanilla ice cream
  • 1/3 cup heavy cream
  • 1/2 cup granulated sugar
  • 2 tbsp water
  • 1/4 tsp flaky sea salt
  • 1/3 cup chopped toasted pecans

Instructions

  1. 1Peel, core, and cut the apples into 1/2-inch chunks for quick, even cooking.
  2. 2Melt butter in a medium skillet over medium heat. Add apples, brown sugar, cinnamon, cardamom, and salt.
  3. 3Cook, stirring often, 7 to 9 minutes until apples are tender, caramelized at the edges, and swimming in a glossy spiced syrup.
  4. 4Keep the apple mixture warm over very low heat while you make the caramel.
  5. 5In a small saucepan combine granulated sugar and water over medium heat without stirring; swirl the pan occasionally.
  6. 6Cook 5 to 7 minutes until the syrup turns a deep amber color and smells toasty; remove from heat immediately.
  7. 7Carefully whisk in the heavy cream (it will bubble vigorously) until smooth, then stir in flaky sea salt.
  8. 8Let the caramel cool 2 minutes so it thickens to a pourable sauce.
  9. 9Scoop vanilla ice cream into four bowls.
  10. 10Spoon the warm spiced apples and their syrup over the ice cream.
  11. 11Drizzle generously with salted caramel sauce and finish with toasted pecans for crunch.
