Ingredients

  • 1 cup glutinous rice
  • 1 1/4 cups coconut milk
  • 1/4 cup sugar
  • 1/4 tsp salt
  • 1 large ripe mango
  • 1 tbsp toasted sesame seeds
  • 1 tsp lime zest

Instructions

  1. 1Rinse the glutinous rice in cold water until the water runs mostly clear, then soak it in fresh water for 20 minutes and drain well.
  2. 2Combine one cup of the coconut milk with the sugar and salt in a small saucepan over medium heat, stirring until the sugar dissolves and the mixture is steamy but not boiling.
  3. 3Place the drained rice in a microwave-safe bowl, pour half of the sweetened coconut milk over it, cover loosely, and microwave on high for 4 minutes.
  4. 4Stir the rice, add the remaining sweetened coconut milk, cover again, and microwave another 3 to 4 minutes until the grains are tender, sticky, and have absorbed most of the liquid.
  5. 5Let the sticky rice rest covered for 5 minutes so it firms slightly and becomes easier to shape.
  6. 6Peel the mango and cut the flesh into small dice; fold most of the mango pieces and the lime zest gently into the warm rice.
  7. 7With lightly oiled hands, roll tablespoon-sized portions of the mixture into compact bite-sized balls or small logs.
  8. 8Arrange the bites on a plate, drizzle with the remaining plain coconut milk, and sprinkle toasted sesame seeds over the tops.
  9. 9Serve warm or at room temperature; chill leftovers in an airtight container for quick grab-and-go sticky dessert bites up to 2 days.
