  • 1 cup fresh sweet corn kernels
  • 3/4 cup unsalted butter
  • 1 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 large egg
  • 1 egg yolk
  • 1 1/2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 1/2 tsp cream of tartar
  • 1 tsp baking soda
  • 3/4 tsp kosher salt
  • 2 tsp ground cinnamon
  • 1/4 cup cinnamon-sugar mix

Instructions

  1. 1Preheat the oven to 350°F and line two baking sheets with parchment. In a small dry skillet over medium heat, toast the corn kernels until lightly charred in spots and fragrant, 4 to 6 minutes, then cool completely.
  2. 2Pulse the cooled corn in a food processor until finely chopped but not pureed; you want tiny golden flecks, not a paste. Pat very dry with paper towels if any liquid remains.
  3. 3In a large bowl cream the softened butter with both sugars until pale and fluffy, about 3 minutes with a hand mixer. Beat in the whole egg, yolk, and vanilla until fully incorporated.
  4. 4Whisk together the flour, cream of tartar, baking soda, salt, and ground cinnamon. Add the dry ingredients to the butter mixture and mix on low just until a soft dough forms.
  5. 5Fold in the chopped corn until evenly distributed. Chill the dough 15 minutes so it firms slightly and the cookies bake thicker.
