Instructions

  1. 1Preheat the oven to 350°F. Melt butter in a 10-inch oven-safe skillet over medium heat, then sprinkle the brown sugar evenly across the bottom.
  2. 2Arrange the peach slices in a single snug layer over the sugar and scatter the berries in the gaps; cook 2 minutes just until the sugar begins to bubble, then remove from heat.
  3. 3In a bowl whisk flour, cornmeal, baking powder, and salt. In another bowl cream the remaining soft butter with granulated sugar until light, then beat in the egg, milk, vanilla, and lemon zest.

  5. 5Dollop the batter over the fruit in the skillet and gently spread it to the edges so most of the fruit is covered.
