- 3 cups plain whole-milk Greek yogurt
- 1 cup heavy cream
- 1/3 cup honey
- 2 tsp vanilla extract
- 1 tsp fresh lemon zest
- 1 cup fresh strawberries, hulled
- 1/2 cup fresh blueberries
- 1/2 cup fresh raspberries
- 3 tbsp granulated sugar
- 1 tbsp fresh lemon juice
- 1/8 tsp pinch of salt
Instructions
- 1In a blender or food processor, combine the strawberries, blueberries, raspberries, granulated sugar, and lemon juice. Blend until mostly smooth with a few small berry pieces remaining for texture.
- 2Pour the berry puree into a small saucepan and simmer over medium heat for 6 to 8 minutes, stirring often, until slightly thickened and reduced by one-third. Cool completely to room temperature, then chill in the refrigerator.
- 3In a large bowl, whisk together plain whole-milk Greek yogurt, heavy cream, honey, vanilla extract, lemon zest, and salt until completely smooth and the honey is dissolved.
- 4Pour the yogurt base into a 9x5-inch loaf pan or shallow freezer-safe container. Dollop spoonfuls of the cooled berry puree over the surface.
- 5Using a butter knife or skewer, gently swirl the berry puree through the yogurt in figure-eight motions, creating distinct ribbons without fully mixing it in.
- 6Cover the pan tightly with plastic wrap pressed directly onto the surface to prevent ice crystals. Freeze for at least 4 hours or until firm but still scoopable.
- 7If the frozen yogurt becomes rock-hard after overnight freezing, let it sit at room temperature for 8 to 10 minutes before scooping.
- 8Scoop into bowls or cones. For extra color, spoon any remaining berry puree on top as a quick sauce.
