  • 1 1/2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 2 tsp baking powder

  • 1/4 tsp ground nutmeg
  • 1/2 tsp fine salt
  • 2/3 cup whole milk
  • 1 large egg
  • 4 tbsp melted unsalted butter
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
  • 3 tbsp pure maple syrup
  • 1–2 tbsp milk for glaze
  • 1 tbsp hot honey optional drizzle

Instructions

  1. 1Preheat the oven to 400°F and line a large rimmed sheet pan with parchment paper. Core and dice the Honeycrisp apples into 1/2-inch pieces; no need to peel.
  2. 2In a large bowl whisk together the flour, granulated sugar, baking powder, cinnamon, nutmeg, and salt.
  3. 3In a measuring cup or small bowl whisk the milk, egg, melted butter, and vanilla until smooth.
  4. 4Pour the wet ingredients into the dry and stir just until a thick batter forms; fold in the diced apples so every piece is coated.
  5. 5Using a small cookie scoop or two spoons, drop heaping tablespoon mounds of batter onto the prepared sheet pan, spacing them about 1 inch apart. You should get roughly 24–28 bites.
  6. 6Bake 12–15 minutes until the bottoms are golden, the tops spring back lightly, and the apple pieces look tender and caramelized at the edges.
  7. 7While the bites bake, whisk the powdered sugar with maple syrup and enough milk to make a thick but pourable glaze.
  8. 8Remove the pan from the oven and immediately drizzle or brush the warm fritter bites with the maple glaze so it sets into a shiny coat.
