Ingredients
- 2 cups plain Greek yogurt
- 3 tbsp honey
- 2 cups mixed berries frozen
- 1 cup rolled oats
- 1/3 cup dark chocolate chips
Instructions
- 1Line a rimmed half-sheet pan with parchment paper, leaving overhang on the long sides for easy lifting later. Set the pan aside while you prepare the base.
- 2In a medium bowl, stir the Greek yogurt and honey together until the mixture is smooth, thick, and evenly sweetened with no streaks of honey remaining.
- 3Spread the sweetened yogurt in an even layer across the prepared sheet pan, aiming for roughly 1/4-inch thickness so the bars freeze solid and slice cleanly.
- 4Scatter the frozen mixed berries evenly over the yogurt layer, gently pressing a few into the surface so they stay put when frozen. Sprinkle the rolled oats across the top for texture.
- 5Melt the dark chocolate chips in short microwave bursts, stirring between each, until fully smooth and pourable. Drizzle the melted chocolate in thin ribbons over the entire surface.
- 6Transfer the sheet pan to the freezer and freeze uncovered for at least 3 hours, or until the yogurt is rock-solid and the chocolate has hardened completely.
- 7Lift the frozen slab out using the parchment overhang and place it on a cutting board. Using a sharp knife warmed under hot water, cut into 8 neat rectangular bars.
- 8Serve immediately as ice-cold bars, or wrap individually and return to the freezer for grab-and-go meal-prep desserts throughout the week.
