Ingredients
- 5 medium crisp apples (Honeycrisp or Gala)
- 3/4 cup light brown sugar
- 1/4 cup granulated sugar
- 3/4 cup old-fashioned rolled oats
- 1/2 cup all-purpose flour
- 6 Tbsp unsalted butter
- 1 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 Tbsp fresh lemon juice
- 1 tsp vanilla extract
- 1/2 tsp flaky sea salt
- 1/3 cup caramel sauce
- 1/8 tsp pinch of salt
Instructions
- 1Preheat the oven to 350°F. Peel, core, and slice the apples into thin half-moons about 1/4-inch thick.
- 2In a large bowl toss the apple slices with lemon juice, half the brown sugar, cinnamon, nutmeg, vanilla, and the pinch of salt until evenly coated.
- 3Melt half the butter in a 10-inch cast-iron skillet over medium heat; add the apple mixture and cook, stirring occasionally, for 6 to 8 minutes until the fruit softens slightly and releases juices.
- 4Drizzle most of the caramel sauce over the warm apples and stir once so it coats the fruit; remove the skillet from heat.
- 5In a separate bowl combine the oats, flour, remaining brown sugar, and granulated sugar; cut in the remaining cold butter with a fork or fingers until the mixture forms damp clumps.
- 6Scatter the oat streusel evenly over the apples in the skillet, leaving a few gaps so steam can escape.
- 7Bake for 28 to 32 minutes until the topping is deep golden and crisp and the filling is bubbling vigorously the edges.
- 8Cool the skillet on a rack for 10 minutes, then finish with a final drizzle of caramel and a sprinkle of flaky sea salt.
- 9Scoop into bowls while still warm; the crisp is excellent with a scoop of vanilla ice cream that melts into the caramel juices.
