Ingredients
- 6 sheets strawberry fruit roll-ups
- 3 cups vanilla frozen yogurt
- 1 cup diced fresh strawberries
- 2 tbsp honey
- 6 wooden popsicle sticks
Instructions
- 1Line a loaf pan or small rectangular container with parchment, leaving overhang on the long sides for easy lifting later.
- 2Let the frozen yogurt sit out a few minutes until soft enough to spread smoothly without large ice crystals.
- 3Unfold the fruit roll-ups and press them into the bottom and slightly up the sides of the pan so they form a colorful wrapper layer.
- 4Spoon half the softened frozen yogurt over the fruit leather and smooth into an even layer with an offset spatula.
- 5Toss the diced strawberries with the honey in a small bowl until glossy, then scatter them evenly over the yogurt layer.
- 6Add the remaining frozen yogurt on top, smooth the surface, and gently press so the fruit is fully enclosed.
- 7Insert wooden popsicle sticks in a row down the center, spacing them evenly so each future bar gets one handle.
- 8Freeze the pan at least 3 hours or overnight until the block is solid and the fruit roll-up wrapper peels cleanly.
- 9Lift out using the parchment, cut between the sticks into six neat bars with a warm knife, and rewrap each bar in its fruit leather edges for picnic packing.
- 10Keep bars frozen until serving; they stay tidy in a cooler and peel open like a classic roll-up for kids and adults at the Labor Day picnic table.
