Ingredients
- 2 tbsp unsalted butter
- 2 cups mini marshmallows
- 2 cups crispy rice cereal
- 1/2 tsp vanilla extract
- 1 pinch pinch of kosher salt
Instructions
- 1Set two small 6-inch nonstick skillets or mini cast-iron pans over low heat on the stovetop. Add half the butter to each pan and let it melt completely until foamy and fragrant, about 1 minute.
- 2Scatter half the mini marshmallows into each pan. Stir gently with a heatproof spatula until the marshmallows soften, puff, and turn glossy, 2 to 3 minutes; do not let them brown.
- 3Remove both pans from the heat. Stir the vanilla extract and salt into each melted marshmallow mixture until evenly combined and smooth.
- 4Immediately fold half the crispy rice cereal into each pan, pressing and turning until every piece is fully coated in the sticky marshmallow mixture.
- 5While still warm, use the back of the spatula or clean damp fingers to press the mixture firmly and evenly into each pan so it forms a compact single-serve disk about 1 inch thick.
- 6Let the treats cool in the pans at room temperature for 10 to 12 minutes until set but still slightly soft in the center.
- 7Run a thin spatula the edges and lift each treat out onto a plate. Slice or break into pieces if desired, or enjoy whole as a personal skillet dessert.
- 8Serve immediately for the classic gooey texture, or wrap leftovers tightly once fully cooled for next-day snacking.
