Ingredients
- 6 tbsp unsalted butter
- 1/2 cup light brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1 1/2 tbsp culinary-grade matcha powder
- 1/2 tsp baking soda
- 1/4 tsp fine salt
- 3/4 cup white chocolate chips
- 1/2 tsp flaky sea salt
Instructions
- 1Preheat the oven to 350°F. Place a 10-inch oven-safe skillet over medium-low heat and melt the butter until foaming and just golden at the edges.
- 2Remove the skillet from heat. Stir in both sugars until the mixture looks glossy and the sugar begins to dissolve.
- 3Let the mixture cool 2 minutes so it will not scramble the egg, then crack in the egg and add the vanilla; whisk vigorously until smooth and slightly thickened.
- 4In a small bowl whisk together the flour, matcha, baking soda, and fine salt until the green powder is evenly distributed with no clumps.
- 5Fold the dry mixture into the skillet wet ingredients with a spatula just until no dry streaks remain; the dough will be thick and sticky.
- 6Fold in most of the white chocolate chips, reserving a small handful for the top.
- 7Press the dough into an even layer that reaches the edges of the skillet. Scatter the remaining chips over the surface and sprinkle with flaky sea salt.
- 8Bake on the center rack for 16 to 19 minutes until the edges are set and lightly golden while the center still looks soft and slightly underdone.
- 9Cool the skillet on a wire rack for 8 to 10 minutes so the cookie firms enough to slice cleanly into wedges.
- 10Serve warm straight from the pan with a scoop of vanilla ice cream if desired; the matcha flavor blooms as it cools slightly.
