Ingredients

  • 2 cups vanilla light ice cream or frozen yogurt
  • 6 pieces strawberry fruit leather or roll-ups
  • 3/4 cup fresh strawberries, diced
  • 1/3 cup graham cracker crumbs
  • 2 tbsp mini chocolate chips
  • 1 tbsp honey

Instructions

  1. 1Choose a metal loaf pan or small square baking pan and line it completely with parchment, leaving long overhangs on all sides so the finished slab lifts out cleanly.
  2. 2Let the light ice cream or frozen yogurt sit at room temperature for 5–8 minutes until just soft enough to spread but not melted puddles.
  3. 3Spread half of the softened ice cream evenly across the bottom of the lined pan in a smooth layer.
  4. 4Lay three fruit roll-up sheets side by side over the ice cream, pressing gently so they stick without tearing.
  5. 5Scatter half of the diced strawberries and half of the mini chocolate chips over the fruit leather.
  6. 6Spread the remaining ice cream on top, smoothing carefully to cover the fruit layer completely.
  7. 7Top with the remaining fruit roll-ups, then finish with the rest of the strawberries, chocolate chips, graham crumbs, and a light drizzle of honey.
  8. 8Cover the pan tightly with foil or plastic wrap and freeze until firm, at least 3 hours or overnight.
  9. 9When ready to serve, lift the entire slab out using the parchment overhangs and place on a cutting board.
  10. 10Using a sharp knife warmed under hot water and wiped dry, cut the slab into 6 neat bars.
  11. 11Serve immediately or wrap individually and return extras to the freezer for grab-and-go treats.
