One-Bowl Gala Apple Cinnamon Snack Cake

  • 2 medium Gala or Honeycrisp apples
  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/2 tsp kosher salt
  • 2 large eggs
  • 1/2 cup neutral oil
  • 1/2 cup whole milk
  • 2 tsp vanilla extract
  • 1/2 cup powdered sugar
  • 1 to 2 tbsp apple cider or milk

Instructions

  1. 1Heat the oven to 350°F. Grease an 8-inch square metal pan and line the bottom with a parchment sling for easy lift-out.
  2. 2Peel and dice the apples into small half-inch pieces so they bake tender and distribute evenly through the batter.
  3. 3In a large bowl whisk the flour, both sugars, baking powder, cinnamon, ginger, and salt until no streaks of spice remain.
  4. 4Add the eggs, oil, milk, and vanilla. Stir with a spatula just until the batter is smooth and thick; a few small lumps are fine.
  5. 5Fold in the diced apples so every scoop of batter carries fruit. Scrape the batter into the prepared pan and smooth the top.
  6. 6Bake until the center springs back lightly, the edges pull from the pan, and a toothpick comes out with moist crumbs, 28 to 34 minutes.
  7. 7Cool the cake in the pan on a wire rack for 15 minutes, then lift out with the parchment and cool another 20 minutes so the crumb sets.
  8. 8Whisk the powdered sugar with just enough cider or milk to make a thick but pourable glaze that ribbons off the spoon.
  9. 9Drizzle the glaze over the barely-warm cake in thin zigzags so it sets with a light sheen.
  10. 10Cut into 9 squares. Serve slightly warm or at room temperature; leftovers keep well for lunchboxes the next day.
