Ingredients
- 2 cups fresh sweet corn kernels
- 1 cup whole milk
- 3/4 cup heavy cream
- 1/3 cup granulated sugar
- 3 Tbsp cornstarch
- 1 tsp vanilla extract
- 1/4 tsp fine sea salt
- 3 medium ripe peaches
- 2 Tbsp light brown sugar
- 1 tsp fresh lemon juice
- 1/4 tsp ground cinnamon
- 1/2 cup crushed shortbread cookies or graham crumbs
- 1 cup whipped cream for topping
Instructions
- 1In a blender, combine the fresh corn kernels with the milk and blend until mostly smooth but still slightly textured; this keeps the pudding tasting like real sweet corn rather than pure puree.
- 2Pour the corn-milk mixture into a medium saucepan and whisk in the heavy cream, granulated sugar, cornstarch, and sea salt until no lumps remain.
- 3Set the pan over medium heat and cook, whisking constantly, until the mixture thickens to a pudding consistency and large bubbles break the surface, about 6 to 8 minutes. Do not walk away or it can scorch.
- 4Remove from heat, stir in the vanilla extract, then transfer the hot pudding to a bowl. Press plastic wrap directly onto the surface and refrigerate until completely cold and set, at least 2 hours.
- 5While the pudding chills, dice the peaches into small bite-size pieces. Place them in a small saucepan with the brown sugar, lemon juice, and cinnamon.
- 6Cook the peaches over medium heat just until they release juices and soften slightly but still hold their shape, about 4 to 5 minutes; you want a fresh, spoonable compote, not jam. Cool completely.
- 7To assemble, spoon a layer of crushed shortbread into the bottom of four glasses or jars. Add a generous layer of the chilled corn pudding, then a layer of peach compote.
- 8Repeat the layers once more if space allows, finishing with peach compote. Top each parfait with a dollop of whipped cream right before serving.
- 9Serve immediately or keep assembled (without whipped cream) covered in the fridge up to 4 hours; the corn pudding stays silky and the peaches bright.
