Ingredients
- 1 cup crushed graham crackers
- 3 tbsp unsalted butter, melted
- 8 oz cream cheese, softened
- 1/2 cup plain Greek yogurt
- 1/3 cup honey
- 1 tsp fresh lemon zest
- 1 tsp vanilla extract
- 3 medium ripe nectarines
- 1 tbsp fresh lemon juice
- 1/4 cup chopped toasted pistachios
Instructions
- 1Crush the graham crackers into fine crumbs and stir them with the melted butter until the mixture holds together when pressed.
- 2Divide the crumb mixture among four small jars or glasses and press firmly into an even base layer with the back of a spoon.
- 3In a mixing bowl beat the softened cream cheese until completely smooth and free of lumps.
- 4Add the Greek yogurt, honey, lemon zest, and vanilla; whip on medium speed until light, fluffy, and fully combined.
- 5Spoon the cheesecake filling evenly over the crusts in each jar, smoothing the tops.
- 6Pit and thinly slice the nectarines, then toss them gently with lemon juice to keep their color bright.
- 7Arrange the nectarine slices in a pretty overlapping layer on top of each cheesecake.
- 8Cover the jars and refrigerate for at least 2 hours or up to overnight so the filling firms and the flavors meld.
- 9Just before serving, drizzle a little extra honey over the fruit and sprinkle with toasted pistachios for crunch.
- 10Serve chilled straight from the fridge for an easy grab-and-go dessert that still feels special.
