Ingredients
- 2 scoops (about 60 g) chocolate protein powder
- 1/2 cup almond flour
- 1/4 cup unsweetened cocoa powder
- 1/2 tsp baking powder
- 1 pinch pinch of salt
- 2 large eggs
- 1/3 cup unsweetened applesauce
- 3 tbsp maple syrup
- 2 tbsp melted coconut oil
- 1 tsp vanilla extract
- 1/4 cup dark chocolate chips
Instructions
- 1Preheat the oven to 325°F and lightly grease a 12-cup mini muffin pan or line with paper liners.
- 2In a medium bowl whisk together the protein powder, almond flour, cocoa powder, baking powder, and salt until evenly combined and lump-free.
- 3In a separate bowl beat the eggs, then whisk in the applesauce, maple syrup, melted coconut oil, and vanilla until smooth.
- 4Pour the wet mixture into the dry ingredients and fold gently with a spatula just until a thick, glossy batter forms; do not overmix.
- 5Fold in most of the chocolate chips, reserving a few for topping.
- 6Divide the batter evenly among the mini muffin cups, filling each three-quarters full.
- 7Press the remaining chocolate chips onto the tops of each bite.
- 8Bake for 12–15 minutes until the edges look set and a toothpick inserted in the center comes out with a few moist crumbs.
- 9Cool in the pan for 5 minutes, then transfer to a wire rack to finish cooling so the centers stay fudgy.
- 10Serve slightly warm or chill for meal-prep; store in an airtight container in the fridge up to 5 days.
