Ingredients

  • 2 scoops (about 60 g) chocolate protein powder
  • 1/2 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1 pinch pinch of salt
  • 2 large eggs
  • 1/3 cup unsweetened applesauce
  • 3 tbsp maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 cup dark chocolate chips

Instructions

  1. 1Preheat the oven to 325°F and lightly grease a 12-cup mini muffin pan or line with paper liners.
  2. 2In a medium bowl whisk together the protein powder, almond flour, cocoa powder, baking powder, and salt until evenly combined and lump-free.
  3. 3In a separate bowl beat the eggs, then whisk in the applesauce, maple syrup, melted coconut oil, and vanilla until smooth.
  4. 4Pour the wet mixture into the dry ingredients and fold gently with a spatula just until a thick, glossy batter forms; do not overmix.
  5. 5Fold in most of the chocolate chips, reserving a few for topping.
  6. 6Divide the batter evenly among the mini muffin cups, filling each three-quarters full.
  7. 7Press the remaining chocolate chips onto the tops of each bite.
  8. 8Bake for 12–15 minutes until the edges look set and a toothpick inserted in the center comes out with a few moist crumbs.
  9. 9Cool in the pan for 5 minutes, then transfer to a wire rack to finish cooling so the centers stay fudgy.
  10. 10Serve slightly warm or chill for meal-prep; store in an airtight container in the fridge up to 5 days.
